Everything Eggnog

Everything that’s festive about the Yuletide…
everything eggnog!
Using our noggins, the Menu Shoppe has it covered and some
eggs-ceptional eggnog finds.
Classic Eggnog
12 egg whites
12 egg yolks
1 1/2 cups granulated sugar
1 1/2 quarts brandy
1 pint dark rum
1 quart milk
1 quart heavy cream (lightly whipped)
Beat the whites until stiff. Put aside. Beat the yolks until they are light. Add gradually the sugar and beat the mixture until it is thick and pale. Chill the mixture. Beat in slowly the brandy and the rum. Add in the milk and the cream, beating constantly with a wire whisk. Fold in the egg whites and sprinkle with nutmeg.
Eggnog Mousse
3 egg yolks ( or 1/2 cup egg substitute )
1/2 cup granulated sugar
1 package unflavored gelatin
3 tablespoons dark rum
2 tablespoons brandy
2 cups whipping cream
1/2 cup granulated sugar
1 1/2 teaspoons nutmeg
2 teaspoons vanilla extract
3 egg whites
Beat egg yolks and 1/2 cup sugar in stainless steel bowl over hot water on top half of double boiler until they lighten in color and become fluffy (about 2 minutes). Add gelatin that has been softened in rum and brandy, to egg mixture and continue beating for another minute. Remove mixture from heat and refrigerate for 10 minutes.
Meanwhile, whip cream, 1/2 cup sugar, nutmeg and vanilla extract together. Beat egg whites until they form firm peaks. Fold whipped cream into chilled gelatin mixture, mixing thoroughly. Carefully fold in egg whites. Chill for 4 to 6 hours. Dress with a sprinkle of nutmeg or crushed peppermint candies.

Eggnog Cheesecake
A holiday favorite with an extra twist of  walnut-streusel topping.

Eggnog Martini
1 oz eggnog
1 oz Frangelico
1 oz vodka
2 tablespoons crushed ice
Place all ingredients into a cocktail shaker and shake well for about 20 to 30 seconds. Pour the mix through a strainer into a martini glass. Add a dash of nutmeg.  Enjoy!
