Icy chill peppermint panache

Here’s a twist on classic cheesecake
  • 1 9-ounce box chocolate wafer cookies
  • 1/4 cup sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 pounds cream cheese, room temperature
  • 1 cup sugar
  • 4 large eggs
  • 1/4 cup half and half
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/3 cup 1-inch-diameter hard red-and-white-striped peppermint candies, crushed ( but not holiday hopes )
  • 1 1/2 cups sour cream
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • extra  peppermint candies for trim
For the crust:
Wrap outside of 9-inch-diameter springform pan with aluminum foil. Finely grind cookies with sugar in processor. Add butter, process to blend. Press mixture onto bottom and up sides of prepared pan. Refrigerate crust while preparing filling.
For the filling:
Preheat oven to 350°F. Beat cream cheese in large bowl until smooth. Add sugar and beat until well blended. Add eggs 1 at a time, beating until blended after each addition. Beat in half and half, then vanilla and peppermint extracts. Stir in crushed peppermint candies.  Pour filling into crust.
For topping: 
Stir sour cream, sugar and extracts in small bowl to blend. Pour mixture over hot cheesecake, covering completely. Return cheesecake to oven and bake until top begins to set, about 8 minutes. Transfer to rack; cool completely. Cover and refrigerate overnight. (Can be made 1 day ahead. Stay chill ) Cut around sides of pan to loosen cake. Remove pan sides. Trim with peppermint candies.

Winter Wonderland Peppermintini 
3/4 oz Peppermint Schnapps
3/4 oz Creme de Cacao
1/4 oz Grenadine
1/4 oz Half & Half
a splash of 7-Up
1 1/2 oz. (3 tbsp.) 80-proof vodka
2 tsp. Coffee-mate Sugar Free French Vanilla powdered creamer
1 no-calorie sweetener packet
1/4 tsp. peppermint extract
1 small candy cane for trim
Place powdered creamer and sweetener in a glass. Add 1/4 cup warm water and stir to dissolve.  Fill a cocktail shaker halfway with ice cubes.
Add creamer mixture, vodka, and peppermint extract. Cover and shake well, until mixture is cold. Strain into a martini glass. Trim with a candy cane.
Peppermint Cosmo
1 cup pomegranate juice
Juice of 1 lime
4 ounces vodka
1/4 teaspoon peppermint extract
ice cubes
mini candy canes
tablespoons chopped fresh mint

Combine juice, vodka, peppermint and 1/2 cup water in a shaker with ice. Shake vigorously and strain into  festive glasses. Trim with candy canes and mint. http://yourhomeonlybetter.com/peppermint-holiday-cocktails
