Did you know that Monday is National French Toast Day?
So for those still enjoying a long holiday weekend…here’s some nifty recipes to jumpstart your Monday into the holiday season.

Or classics like this…
Classic French Toast
- 6 thick slices bread
- 2 eggs
- 2/3 cup milk
- 1/4 teaspoon ground cinnamon (optional)
- 1/4 teaspoon ground nutmeg (optional)
- 1 teaspoon vanilla extract ( optional )
- salt to taste
Beat together egg, milk, salt, desired spices and vanilla.
Heat a lightly oiled griddle of skillet over medium-high flame.
Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot…with maple syrup. Steaming coffee of your choice.

Other sweet variations…
French Toast with Raspberry Whole Wheat Bread – Berry sweet. Or substitute strawberries or even pomegranates.
Cannoli French Toast – Simple, but elegant and savory.
Banana French Toast – Blend bananas into the batter. Then serve with sliced bananas. Or pureed a banana paste to stuff the french bread.
Pumpkin Bread French Toast – Merely use your favorite pumpkin loaf recipe and prepare as classic french toast. Serve with whipped cream and cinnamon or nutmeg sprinkles.
